Ingredients
  

Main Ingredients
  • 1 steak 1 steak (Ribeye, NY strip, sirloin, or budget cut) Choose any cut you like, ideally with marbling for more flavor.
  • 2 eggs 2 eggs Use fresh eggs for the best flavor.
  • to taste none Salt and pepper Essential for seasoning.
  • 1 tbsp A splash of oil or a dab of butter For cooking the steak.
Optional Ingredients
  • 1 clove Garlic For additional flavor when basting.
  • 1 sprig Thyme For extra taste, if desired.
  • 1 tbsp Knob of butter For basting the steak.

Method
 

Preparation
  1. Take the steak out of the fridge and let it sit at room temperature for about 10 minutes to get the chill off.
  2. Pat the steak dry and season both sides generously with salt and pepper.
  3. Heat a heavy skillet over high heat and add a splash of oil.
Cooking the Steak
  1. Once the pan is hot, place the steak in and cook for about 3 minutes on each side for medium-rare.
  2. If desired, add a knob of butter and garlic towards the end, basting the steak with the melted butter.
  3. Remove the steak from the pan and let it rest for a few minutes.
Cooking the Eggs
  1. Wipe out the pan if necessary or use the drippings, then crack the eggs into the pan.
  2. Cook the eggs sunny-side up or scramble them based on preference.
Serving
  1. Slice the rested steak and plate it next to the eggs.
  2. Serve immediately with additional salt and pepper, if desired.

Notes

This dish goes well with crispy hash browns, toast, or fresh vegetables like tomatoes and avocado. Feel free to add hot sauce for extra flavor.
