  • 2 cups chopped leftover rotisserie chicken Use all parts of the chicken including the skin for flavor.
  • 3 tablespoons mayonnaise Eyeball it for consistency.
  • 1 tablespoon mustard
  • 1 tablespoon pickle juice To taste.
  • to taste salt and pepper
  • 1/2 cup chopped celery or sweet red apple Optional addition for crunch.
  • to taste fresh herbs (parsley or dill) Optional but recommended for flavor.
For the Garlic Butter Rotisserie Chicken Pasta
  • 8 ounces pasta of choice Boil to preferred doneness.
  • 3 tablespoons butter Melted in a skillet.
  • 3 cloves minced garlic Sautéed with butter.
  • 2 cups shredded rotisserie chicken Added to garlic butter.
  • 1/4 cup parmesan cheese Grated.
  • to taste cracked pepper
  • 1 cup fresh spinach Optional for additional nutrition.
  • 1 squeeze lemon Optional for a hint of acidity.

Method
 

Easy Rotisserie Chicken Salad Preparation
  1. Chop up the leftover rotisserie chicken.
  2. In a bowl, combine chicken with mayonnaise, mustard, pickle juice, salt, and pepper.
  3. Add celery or apple and fresh herbs if desired.
  4. Mix everything together and serve by itself or in a sandwich.
Garlic Butter Rotisserie Chicken Pasta Preparation
  1. Boil pasta according to package instructions.
  2. In a skillet, melt butter and sauté minced garlic until fragrant.
  3. Add the shredded rotisserie chicken to the skillet and cook briefly to heat through.
  4. Drain the pasta and add it to the skillet, combining everything.
  5. Mix in parmesan cheese, cracked pepper, spinach, and lemon juice before serving.

Notes

Store any leftovers tightly sealed in the fridge and consume within three days. Reheat gently and avoid drying out the chicken.
