Ingredients
  

For the Easy Rotisserie Chicken Salad
  • 2 cups chopped leftover rotisserie chicken Include skin for extra flavor.
  • 3 tablespoons mayonnaise Adjust to taste.
  • 1 tablespoon mustard
  • 1 tablespoon pickle juice
  • 1/2 cup chopped celery Optional.
  • 1 small sweet red apple Optional for sweetness.
  • to taste salt and pepper
  • to taste fresh herbs (parsley or dill) Optional.
For the Garlic Butter Rotisserie Chicken Pasta
  • 8 ounces favorite pasta Any type works.
  • 4 tablespoons butter
  • 3 cloves minced garlic
  • 1 cup chopped leftover rotisserie chicken
  • 1/2 cup parmesan cheese Grated.
  • to taste cracked black pepper
  • 1 cup fresh spinach Optional.
  • 1 lemon for juicing Optional for flavor.

Method
 

Preparation for Chicken Salad
  1. Chop the leftover rotisserie chicken into bite-sized pieces.
  2. In a bowl, combine chicken, mayonnaise, mustard, pickle juice, celery, and apple.
  3. Season with salt, pepper, and fresh herbs if desired.
  4. Mix until well combined.
Preparation for Chicken Pasta
  1. Boil your favorite pasta according to package directions.
  2. While the pasta cooks, melt butter in a skillet and add minced garlic.
  3. Add the chopped leftover chicken to the skillet and sauté for 2-3 minutes.
  4. Drain the pasta and toss it with the chicken and garlic mixture.
  5. Stir in Parmesan cheese and add spinach and lemon juice if desired.

Notes

Store leftovers in an airtight container and use within three days. Reheat gently. Consider adding sauces to enhance flavor.
