Preparation
  1. Let the chicken come to room temperature before cooking.
  2. Preheat the Blackstone griddle to medium-high heat until the oil shimmers.
  3. Flatten the chicken breasts slightly for even cooking.
Cooking
  1. Add the oil to the griddle and place the chicken on it.
  2. Cook the chicken for 8-10 minutes, flipping halfway through.
  3. Check for doneness using a thermometer or by cutting into the chicken.
