Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Thighs can also be used for juiciness.
  • 2 tablespoons canola or olive oil For greasing the griddle.
  • 1 teaspoon salt Or to taste.
  • 1 teaspoon black pepper Or to taste.
  • 1 teaspoon garlic powder Optional for flavor.
  • 1 tablespoon lemon juice For flavor (optional).

Method
 

Preparation
  1. Let the chicken come to room temperature before cooking.
  2. Heat the Blackstone griddle to medium-high heat (around 400°F).
  3. Add oil to the griddle and let it shimmer before adding the chicken.
  4. Season the chicken with salt, pepper, and garlic powder.
  5. Flatten out thicker chicken breasts for even cooking.
Cooking
  1. Place the chicken on the griddle and let it sear without moving it to achieve a good crust.
  2. Flip the chicken halfway through cooking.
  3. Check for doneness using a meat thermometer or by cutting into the thickest part.
  4. Cook for about 8 to 10 minutes until juices run clear.
  5. Optionally, add a splash of lemon juice right before finishing.
Resting
  1. Let the chicken rest for 3-5 minutes before slicing.

Notes

Serve griddled chicken sliced in warm tortillas with corn salsa, atop salads, over buttered rice with roasted veggies, or in paninis.
