Cowboy Butter Sauce
  • 1 stick real butter No margarine, please.
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped Can substitute with cilantro.
  • 1 tablespoon lemon juice Very important for flavor.
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chili flakes Optional for spice.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • 1 tablespoon grated Parmesan For finishing touch.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken wings dry with paper towels to ensure crispiness.
  3. In a large bowl, toss the wings with salt, pepper, and a dab of oil.
  4. Spread the wings out on a wire rack set over a baking tray.
Cooking
  1. Roast the wings in the oven for about 40 minutes, turning them once midway.
  2. While the wings are roasting, prepare the cowboy butter sauce. Melt the butter in a pan.
  3. Add minced garlic, parsley, lemon juice, paprika, Dijon, and chili flakes. Let it bubble for about a minute.
  4. Once the wings are done roasting, pour them into a big bowl and toss with the cowboy butter sauce.
  5. Serve immediately for the best crispiness.

Notes

Crispiness is key; ensure wings are dried well before seasoning. You can add a splash of hot sauce or honey to the cowboy butter for extra flavor!
