Main Ingredients
  • 1 lb flank steak Any steak can be used, such as skirt or sirloin.
  • 2 tbsp olive oil Avocado oil is a great alternative for marinating.
  • 2 tbsp canned chipotle peppers in adobo If unavailable, substitute with smoked paprika and extra chili powder.
  • 1 clove garlic
  • 1 lime juice of
  • 1 tsp ground cumin
  • to taste salt
  • to taste black pepper
  • optional onion and cilantro These enhance the flavor when served.

Method
 

Marination
  1. In a bowl, mix olive oil, chipotle peppers, lime juice, minced garlic, ground cumin, salt, and pepper to create the marinade.
  2. Add the flank steak to the marinade, ensuring it's well coated. Cover and refrigerate for at least 30 minutes, preferably overnight.
Cooking
  1. Preheat your grill or cast iron skillet on high heat.
  2. Remove the steak from the marinade and let any excess drip off.
  3. Cook the steak on the grill or skillet. For medium rare, aim for an internal temperature of 135°F. Cooking time should be around 8 minutes per side, depending on thickness.
  4. Once cooked, transfer the steak to a cutting board and let it rest for 10 minutes.
Slicing
  1. Slice the steak against the grain into thin strips for maximum tenderness.
Serving
  1. Serve the sliced steak in tortillas, over rice, or with nachos and enjoy!

Notes

For added flavor, consider grilling over charcoal for a smoky taste. Letting the steak rest is key to keeping the juices intact.
