Marinate the Chicken
- Combine chipotle peppers, garlic, smoked paprika, oregano, cumin, olive oil, salt, lime juice, and brown sugar in a blender.
- Blend until smooth and pour over chicken thighs in a bowl.
- Marinate in the refrigerator for at least 2 hours, or overnight for best flavors.
Cooking the Chicken
- Prepare grill or heat a skillet on medium-high heat.
- If grilling, cook chicken on the grill until crispy and charred, about 7 minutes per side.
- If cooking in a skillet, place chicken flat and avoid poking it too much. Flip after 7 minutes.
- If baking, place on a sheet in an oven preheated to 425°F and bake for approximately 25 minutes.
- Ensure the chicken is brown and juices run clear before removing from heat.
Notes
For less heat, scrape out chipotle seeds or reduce the amount of chipotle used. Do not skip lime juice, as it adds essential flavor.
