- Heat a large skillet over medium heat and add olive oil.
- Slice chicken breasts into thin pieces and season with salt and pepper, then add to the skillet.
- Cook chicken until browned, about 5-7 minutes.
- Add sliced onions and bell peppers to the skillet and stir, cooking until soft and golden, around 5 minutes.
- Pile mozzarella or provolone cheese on top, reduce heat, cover to melt, about 2-3 minutes.
- Slice hoagie rolls and stuff them with the chicken and veggie mixture. Serve immediately.
Notes
For a bit of crunch, toast the hoagie rolls lightly before stuffing. Experiment with different cheeses and vegetables, such as mushrooms or banana peppers, for variation.
