Ingredients
  

Main Ingredients
  • 1 lb boneless chicken breasts Slice thin or bite-sized.
  • 2 cups bell peppers Cut into strips; use your preference for color.
  • 1 cup onions Sliced.
  • 8 oz mozzarella or provolone cheese Choose one or both for melting.
  • 4 hoagie rolls soft hoagie rolls Slice open for stuffing.
Seasoning
  • 1 tbsp olive oil For cooking the chicken.
  • to taste salt and pepper For seasoning chicken.
  • pinch crushed red pepper Optional for added heat.

Method
 

Cooking
  1. Heat a large skillet over medium heat and add olive oil.
  2. Slice chicken breasts into thin pieces and season with salt and pepper, then add to the skillet.
  3. Cook chicken until browned, about 5-7 minutes.
  4. Add sliced onions and bell peppers to the skillet and stir, cooking until soft and golden, around 5 minutes.
  5. Pile mozzarella or provolone cheese on top, reduce heat, cover to melt, about 2-3 minutes.
  6. Slice hoagie rolls and stuff them with the chicken and veggie mixture. Serve immediately.

Notes

For a bit of crunch, toast the hoagie rolls lightly before stuffing. Experiment with different cheeses and vegetables, such as mushrooms or banana peppers, for variation.
