  • 1 pound boneless chicken breasts
  • 1 medium onion, chopped
  • 2 medium bell peppers, sliced
  • 4 rolls hoagie rolls Soft rolls recommended
  • 1 cup mozzarella or provolone cheese, shredded Use a combination for extra flavor
  • 1 tablespoon olive oil For cooking chicken
  • to taste salt and pepper

Method
 

Preparation
  1. Slice the boneless chicken breasts into thin or bite-sized pieces.
  2. Chop the onion and slice the bell peppers.
Cooking
  1. Heat a large skillet over medium heat and add olive oil.
  2. Add the chicken to the skillet, season with salt and pepper, and cook until browned.
  3. Add the chopped onions and sliced bell peppers to the skillet and sauté until they are soft and golden.
  4. Top the chicken and veggies with shredded mozzarella or provolone cheese. Reduce heat, cover, and let the cheese melt.
Assembly
  1. Slice the hoagie rolls and stuff them generously with the chicken and cheese mixture.
  2. Serve immediately, optionally with mayonnaise or horseradish on the side.

Notes

For added flavor, try adding crushed red pepper flakes or swapping in different vegetables like mushrooms. Toasting the rolls adds a nice crunch.
