  • 3 cups cooked chicken, shredded Use rotisserie, poached, or baked chicken.
  • 2 cups broccoli, steamed Do not overcook; should be bright green.
  • 1 can cream of chicken soup Can substitute with a homemade white sauce.
  • 1/2 cup mayonnaise Or sour cream; mix if desired.
  • 1 cup shredded sharp cheddar cheese Enhances flavor more than mild cheese.
  • 1 teaspoon garlic powder For flavor.
  • 1/2 cup Ritz crackers, crushed For topping, optional but adds crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a casserole dish, arrange the steamed broccoli at the bottom.
  3. Top the broccoli with the shredded chicken.
  4. In a bowl, whisk together the cream of chicken soup, mayonnaise, shredded cheddar cheese, and garlic powder.
  5. Pour the sauce over the chicken and broccoli layers.
  6. Sprinkle additional shredded cheddar cheese and crushed Ritz crackers on top if desired.
  7. Bake in the preheated oven for about 30 minutes, or until golden and bubbly.

Notes

This casserole can be made ahead and stored in the fridge unbaked for 24 hours or frozen before baking. If frozen, add extra baking time. Let it rest for five minutes after baking for best texture.
