  • 2 cups shredded cooked chicken Can use rotisserie chicken for ease.
  • 2 cups fresh broccoli florets Steamed until bright green.
  • 1 can cream of chicken soup Can be homemade if preferred.
  • 1/2 cup mayonnaise Adds creaminess.
  • 1 cup shredded sharp cheddar cheese For the sauce and topping.
  • 1 teaspoon garlic powder
Optional Topping
  • 1 cup crushed Ritz crackers For added crunch, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Steam the broccoli florets until bright green but not mushy.
  3. In a large mixing bowl, combine the cream of chicken soup, mayonnaise, shredded cheddar cheese, and garlic powder. Mix until well blended.
  4. In a casserole dish, layer the cooked chicken and steamed broccoli.
Assembly and Baking
  1. Pour the sauce mixture evenly over the chicken and broccoli layers.
  2. Sprinkle additional shredded cheddar cheese on top, along with crushed Ritz crackers if using.
  3. Bake in the preheated oven for 30 minutes, or until golden and bubbly.

Notes

This dish can be assembled ahead of time and stored in the refrigerator for 24 hours before baking. For freezing, do not add the cracker topping until just before baking.
