Ingredients
  

For the Chicken Crust
  • 2 cups Ground chicken You can grind your own leftover chicken breast if needed.
  • 2 large Eggs Helps the crust hold together.
  • 1/2 cup Parmesan cheese Provides flavor and helps bind the ingredients.
  • 1 teaspoon Italian seasoning Season to taste; throw in pepper if desired.
  • 1 teaspoon Salt
For Toppings
  • 1 cup Pizza sauce Use any favorite sauce.
  • 1 cup Cheese Any cheese you prefer.
  • Optional toppings Customize with vegetables, meats, etc.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, eggs, Parmesan cheese, Italian seasoning, and salt. Mix with your hands until blended and sticky.
  3. Prepare a baking sheet with parchment paper and spread the chicken mixture into a thin circle, about 1/4-inch thick.
Baking
  1. Bake the bare chicken crust for about 20 minutes, until golden at the edges.
  2. Remove from oven, spread your favorite sauce on the crust, add cheese and any additional toppings.
  3. Return to the oven and bake for an additional 5 to 10 minutes to melt the cheese.

Notes

For a crispy crust, squeeze out excess liquid from the ground chicken before mixing. Sprinkle a bit of extra Parmesan on the crust for added flavor. You can substitute ground chicken with turkey or shredded rotisserie chicken as variations.
