  • 2 cups cooked, shredded chicken Can use leftover chicken
  • 1 can black beans, drained Optional; can substitute with pinto beans or skip if preferred
  • 1 cup cooked rice Can use white or brown rice
  • 1 cup shredded cheese Cheddar, Monterey Jack, or any cheese you have
  • 1 tbsp salsa or hot sauce For flavor; use according to taste
  • 4 pieces large soft flour tortillas Best for wrapping burritos
  • 1 pinch cumin, salt, pepper Or your favorite taco seasoning
Optional Extras
  • to taste sour cream For serving
  • to taste guacamole For serving
  • 1 cup diced tomatoes For serving
  • to taste lettuce For serving

Method
 

Preparation
  1. In a skillet, combine the shredded chicken, black beans, salsa, and spices. Warm until heated through.
  2. If needed, add a splash of water or extra salsa to keep the mixture moist.
  3. Warm the tortillas in the microwave for about 10 seconds wrapped in a damp paper towel.
Assembly
  1. Lay a tortilla flat, add rice, then a scoop of the warm chicken-bean mix, and sprinkle with cheese.
  2. Add any optional extras such as sour cream or diced tomatoes.
  3. Fold in the sides of the tortilla and roll tightly to seal the burrito.
Final Touch
  1. For a toasted finish, place the burrito seam-side down in a dry skillet for 1-2 minutes.

Notes

Prepare and store leftovers wrapped in foil for up to 3 days. Reheat in the microwave or oven. Do not freeze with lettuce or sour cream.
