Main Ingredients
  • 1 lb chicken breasts or thighs Skinless is preferred for quicker cooking.
  • 4 cups fresh or frozen broccoli florets Frozen broccoli can be added directly to the pan.
  • 1 tbsp olive oil For sautéing the chicken.
  • 1 pinch salt To taste.
  • 1 tsp garlic powder or soy sauce Optional, to enhance flavor.
Optional Variations
  • 1 cup cream cheese or sour cream To make the dish creamy.
  • 1 tbsp chili flakes For those who want some heat.

Method
 

Preparation
  1. Dice chicken breasts or thighs and toss with olive oil.
  2. Heat a pan over medium heat and add the chicken.
  3. Cook until the chicken is golden, approximately 5-7 minutes, stirring occasionally.
Cooking
  1. Add broccoli to the pan. If using fresh broccoli, add a splash of water and cover the pan to steam.
  2. Sprinkle a pinch of salt and optional garlic powder or soy sauce.
  3. Cook for an additional 5-7 minutes until the broccoli is tender.
Serving
  1. Serve hot, optionally with rice, wrapped in tortillas, or over pasta.

Notes

This recipe is flexible; feel free to add other vegetables or switch out the chicken for tofu or chickpeas as per your dietary preferences. Leftovers can be reheated in the microwave.
