Preparation
- Dice chicken breasts or thighs and toss with olive oil.
- Heat a pan over medium heat and add the chicken.
- Cook until the chicken is golden, approximately 5-7 minutes, stirring occasionally.
Cooking
- Add broccoli to the pan. If using fresh broccoli, add a splash of water and cover the pan to steam.
- Sprinkle a pinch of salt and optional garlic powder or soy sauce.
- Cook for an additional 5-7 minutes until the broccoli is tender.
Serving
- Serve hot, optionally with rice, wrapped in tortillas, or over pasta.
Notes
This recipe is flexible; feel free to add other vegetables or switch out the chicken for tofu or chickpeas as per your dietary preferences. Leftovers can be reheated in the microwave.
