  • 1 inch fresh ginger, grated Fresh ginger is preferable.
  • 1/4 cup bourbon Can substitute with apple juice.
  • 1/4 cup ketchup Helps balance the sauce.
  • 2 tbsp vinegar Adds sharpness to the dish.
  • 1/4 cup water To thin out the sauce.
  • 2 tbsp cornstarch For thickening the sauce.
  • 2 tbsp olive oil For frying.

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken thighs to the pan, ensuring not to crowd the pan, and sear until golden brown on both sides.
  3. Once the chicken is browned, add chopped garlic and grated ginger to the skillet.
  4. Pour in soy sauce, bourbon, brown sugar, ketchup, vinegar, and water. Stir to combine.
  5. Bring the mixture to a gentle simmer and let it cook for about 10 minutes.
  6. Mix cornstarch with a little water to create a slurry, then add it to the skillet to thicken the sauce.
  7. Allow the sauce to thicken and coat the chicken for another 10 minutes.
  8. Taste and adjust seasonings as needed, then serve.

Notes

Pair with steamed rice, garlicky green beans, or a simple side salad for best results. If using a crockpot, combine ingredients and cook on low for 4-5 hours or high for 2-3 hours.
