Ingredients
  

For the beef
  • 1 pound beef tenderloin tips Look for even pieces, avoiding tough silverskin and fat.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 1 teaspoon garlic powder Optional, for extra flavor.
For the mushrooms
  • 8 ounces fresh mushrooms Baby bellas recommended.
  • 1 tablespoon butter For cooking the mushrooms.
For deglazing
  • 1/2 cup red wine or beef broth To scrape up brown bits from the pan.

Method
 

Preparation
  1. Pat the beef dry and place it in a big bowl.
  2. Season the beef with salt, pepper, and garlic powder. Let it sit.
  3. Heat a pan on high until it’s screaming hot and add a dab of oil.
Cooking
  1. Add the beef to the pan, making sure not to crowd it. Cook for a few minutes on each side until browned. Remove the beef from the pan.
  2. In the same pan, add the mushrooms and a knob of butter. Cook until golden and shriveled.
  3. Deglaze the pan with red wine or beef broth, scraping up the brown bits.
  4. Return the beef to the pan, stir, and heat everything through for a couple of minutes.
Serving
  1. Taste and adjust seasoning if necessary. Serve warm.

Notes

Do not overcook the beef; it should be medium-rare. Let the meat rest at room temperature before cooking. Variations can include using top sirloin tips or trying different mushrooms or sauces like cream.
