Ingredients
  

Beef and Broth
  • 2 lbs brisket Also can use beef shank or chuck roast.
  • 6 cups beef broth To enhance the richness of the stew.
Aromatics and Seasoning
  • 1 medium onion, chopped For added flavor.
  • 4 cloves garlic, minced Add more for extra garlic flavor.
  • 1 inch ginger, sliced Essential for the authentic flavor.
  • 2 tbsp brown sugar Adjust to taste.
  • 2 pieces star anise Optional but enhances aroma.
  • 1 tbsp fish sauce For additional umami flavor.
Serving Essentials
  • 4 cups fried garlic rice Must be crispy garlic rice for authenticity.
  • 2 tbsp spring onions, chopped For garnish.
  • 2 tbsp toasted garlic For added flavor.

Method
 

Preparation
  1. Brown the beef in batches to develop flavor, then remove from pot.
  2. In the same pot, add ginger, garlic, and onions.
Cooking
  1. Return beef to the pot, add brown sugar, star anise, and beef broth.
  2. Simmer the mixture on low heat for 1.5 to 2 hours or until the beef is tender.
  3. Adjust seasoning with fish sauce, and sweetness as necessary.
Serving
  1. Serve saucy beef over fried garlic rice.
  2. Garnish with spring onions and toasted garlic.

Notes

For added richness, let leftovers sit overnight; they taste better the next day. Store in a sealed container in the fridge.
