Ingredients
  

For the Beef Stew
  • 2 pounds brisket You can also use beef shank or chuck roast.
  • 1 cup water For simmering the beef.
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar Adjust sweetness to taste.
  • 1 piece star anise For authentic flavor; optional.
  • 1 inch ginger, sliced
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 medium potatoes, peeled To absorb excessive salt/sweetness if necessary.
For Serving
  • 4 cups fried garlic rice Essential for serving.
  • 1/4 cup chopped spring onions For garnish.
  • 1/4 cup toasted garlic For additional garnish.
  • 1 cup beef broth For drizzling or dipping.

Method
 

Preparation
  1. Brown the brisket in batches until golden.
  2. Remove the beef and set aside. In the same pot, sauté ginger, garlic, and onion until fragrant.
  3. Return the beef to the pot, add soy sauce, water, brown sugar, and star anise.
  4. Bring everything to a boil, then reduce heat and allow to simmer for 1.5 to 2 hours or until beef is tender.
  5. Check seasoning and add potatoes if needed to balance sweetness or saltiness.
Serving
  1. Serve the saucy beef over a pile of fried garlic rice.
  2. Drizzle with beef broth and sprinkle with chopped spring onions and toasted garlic.

Notes

Leftovers taste even better the next day. Store in a sealed container in the fridge and reheat gently.
