  • 2 pounds chuck roast Cut into chunks
  • 2 tablespoons oil For browning the beef
  • 1 large onion Chopped
  • 6 cloves garlic Minced
  • 1 can tomato sauce
  • 1/2 cup liver spread Can substitute with peanut butter if preferred
  • 2 large potatoes Peeled and cubed
  • 2 large carrots Peeled and sliced
  • 1 large bell pepper Sliced (any color)
  • 1 cup water or broth Add more if the stew is too thick
  • 1 cup cheese Shredded hard cheese for topping
  • to taste salt and pepper
  • to taste sugar Optional, for balancing flavors

Method
 

Preparation
  1. In a large pot, heat oil over medium heat and brown the chunks of chuck roast in batches. Avoid crowding the pot.
  2. Once browned, remove the beef and set aside. In the same pot, add onions and garlic, and sauté for 1-2 minutes until fragrant.
Cooking
  1. Return the browned beef to the pot. Add tomato sauce and liver spread (or peanut butter as a substitute) and stir to combine.
  2. Add potatoes, carrots, and bell pepper. Pour in water or broth and bring to a boil.
  3. Reduce heat and let it simmer for 1.5 to 2 hours or until the beef is fork-tender, stirring occasionally.
  4. Season with salt, pepper, and sugar as needed. Top with shredded cheese just before serving.

Notes

Kaldereta is versatile; feel free to adjust ingredients based on availability and preference. It can be made with goat, pork, or even tofu. For a creamier version, consider adding coconut milk.
