Ingredients
  

Main Ingredients
  • 1 pound Flank steak or sirloin Best to slice against the grain.
  • 8 ounces Fresh rice noodles Wide and flat noodles labeled 'ho fun'.
  • 1/4 cup Soy sauce Combine dark and light soy sauce for depth.
  • 2 tablespoons Shaoxing wine Optional, but adds wonderful flavor.
  • 1 cup Bean sprouts
  • 2 pieces Scallions Sliced about the length of a finger.

Method
 

Preparation
  1. Slice the flank steak or sirloin against the grain to ensure tenderness.
  2. Sprinkle half a teaspoon of baking soda over the meat and massage it in. Let it rest for 15-20 minutes, then rinse and pat dry.
Cooking
  1. Heat your wok or nonstick skillet until very hot.
  2. Add oil and stir-fry the beef in small batches to avoid overcrowding.
  3. Remove the beef and add the fresh rice noodles along with soy sauce and Shaoxing wine.
  4. Continue to stir-fry, then add back the beef, bean sprouts, and scallions. Mix well.

Notes

Work in small batches to prevent steaming instead of frying. If you don’t have a wok, a big nonstick skillet can work well. Serve immediately for best texture.
