Ingredients
  

For the chicken
  • 1 pound chicken tenders (boneless, skinless) Tender chicken for the sliders
  • 1 cup buttermilk To marinate the chicken
  • 1.5 cups panko breadcrumbs For extra crunch
  • 0.5 cup flour (all-purpose) Used for coating
  • 1 teaspoon garlic powder Adds flavor to the coating
  • 1 teaspoon paprika For color and subtle flavor
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon black pepper Adds seasoning
For the assembly
  • 12 pieces slider buns (preferably Hawaiian rolls) Soft, perfect for sliders
  • 1 cup coleslaw mix Bagged is convenient
  • 0.5 cup mayo For the slaw
  • 3-4 tablespoons sweet chili sauce Adjust based on taste
  • 2 tablespoons hot sauce Adjust for spice preference
  • to taste chopped green onion Optional garnish

Method
 

Preparation
  1. Marinate your chicken in buttermilk for at least 30 minutes. Overnight is great if you can plan ahead.
  2. Mix flour, panko, garlic powder, paprika, salt, and pepper in a big bowl.
  3. Dip the marinated chicken in the flour-panko mix, ensuring they're well coated.
Cooking
  1. Heat oil in a skillet and fry the chicken until golden, about 3 minutes per side. Do not wander off!
Assembly
  1. Mix coleslaw with mayo, sweet chili sauce, and hot sauce, adjusting spice levels to your liking.
  2. Slice the slider buns, place a piece of cooked chicken on the bottom, top with a spoonful of slaw, sprinkle green onion, and place the top bun.
  3. Serve on a platter and enjoy as guests grab their sliders.

Notes

If you want to bake the chicken instead of frying, bake at 425°F for about 15-18 minutes, flipping halfway. They won't be quite as crispy.
