Ingredients
  

Chicken and Marinade
  • 1 pound chicken tenders (boneless, skinless)
  • 1 cup buttermilk Marinate chicken in for at least 30 minutes.
Breading Mixture
  • 1.5 cups panko breadcrumbs
  • 0.5 cup flour (all-purpose) For coating the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper
Sliders
  • 12 pieces slider buns (preferably squishy ones like Hawaiian rolls)
  • 1 cup coleslaw mix Bagged is acceptable.
  • 0.5 cup mayo
  • 3-4 tablespoons sweet chili sauce
  • 2 tablespoons hot sauce Adjust based on spice preference.
  • to taste chopped green onion Optional garnish.

Method
 

Preparation
  1. Marinate the chicken in buttermilk for at least 30 minutes (overnight is great if you can plan ahead).
  2. In a big bowl, mix together flour, panko, garlic powder, paprika, salt, and pepper.
  3. Dip marinated chicken tenders in the flour-panko mixture until well coated.
Cooking
  1. In a skillet with hot oil, fry the chicken until golden brown—about 3 minutes per side.
  2. Combine coleslaw mix with mayo, sweet chili sauce, and hot sauce. Adjust seasoning to taste.
  3. Slice slider buns in half. Layer the cooked chicken on the bottom half, top generously with coleslaw, sprinkle with green onion, and place the top bun.
Serve
  1. Arrange the sliders on a platter and serve immediately.

Notes

These sliders are best served fresh. You can prep the chicken ahead and assemble the sliders right before serving to avoid sogginess. Use light mayo for a healthier twist.
